This irresistible black beauty is made from fabulously intense Shiraz and Grenache grapes grown on the craggy hillsides of France’s deep south – the Languedoc-Roussillon. Look up from the vines and you will see ruins of castles perching precariously on rocky peaks. This inhospitable landscape and these ancient strongholds were home to medieval Cathars who lived in awe of the evil god Rex Mundi (‘King of the World’). He corrupted the faithful with promises of earthly pleasures and the forbidden delights of mortal flesh. But behind the wine is a very kind soul - Hervé Sabardeil, our ‘King of the Black Reds’. Don’t even try to resist the temptation of this red, just sip and enjoy its marriage of liquorice-scented Shiraz and luscious Grenache. "Expressive nose combining red fruits, mixed spices, plum and smoke. Deliciously perfumed attack followed by a lovely joyful yet solid palate with a full-on duo of fruit and spices. Le XV is known to thousands as our ‘King of the Big Reds’. It owes its intensity to Grenache from vines, some over 100 years old, that grow on the rocky slopes of the Pyrenean foothills in the Montagne Noire and yield only tiny quantities of grapes. Le XV also benefits from the painstaking care of self-confessed southern French wine aficionado Mark Hoddy, whose draconian selection process sees him earmark in advance every vineyard he intends to harvest and micro-manage every stage of the winemaking. This takes time, but you can taste the result in every delicious glass! Richly textured, with layers of ripe bramble fruit kept smooth by warming alcohol and soft, ripe tannins, this is a red to enjoy with roast lamb, steak or a hearty stew.
Our scout and buyer for the Languedoc is Mark Hoddy. He's always searching out the vineyards of the Languedoc and further south to the Roussillon, to check out the vintage and the finest parcels of grapes. This is an ace find Mark discovered last vintage via an old friend in Corbières. Close by is Domaine La Lirande, a small estate that enjoyed a great vintage in 2019 and again in 2020 (remember that long, sunny growing season?). The Syrah stood out for quality and, too good to blend, the winemaker kept it solo. Mark reserved the lot in both vintages. Seductive ripe black fruit, velvety, with smoky liquorice and wild herb notes. It's young, so best with hearty dishes and at a barbecue. After a few months, it'll be delicious on its own.
Roquebrun is a cru area of the Languedoc's highly acclaimed Saint-Chinian appellation. It's rocky slopes produce wines that sing authentically of the wild herb garrigue and lavender fields that grow close by. This red is unusual for using a third each of the Bordeaux grapes Cabernet and Merlot, pairing them with the herbal scents and blackberry notes of classic Syrah. Winemaker behind this vintage is Alain Rogier – Winemaker of the Year in 2015 at, the prestigious International Wine Challenge. This red is all fruit, no oak, neatly captured with a screwcap. Ripe but with freshness and not too heavy. In fact, a deliciously well-balanced red that is lush solo, but just the ticket with grilled meats, shepherd's pie or pasta aubergine bake.
Take a minute to read the (literally thousands of) 5-star online reviews for Cabalié. This one is typical: “When my time comes to shuffle off this mortal coil, this is the wine I want in that final glass. It is simply, utterly, indescribably fantastic.” Its secret? It’s crafted by a master winemaker, Hervé Sabardeil, following the centuries-old style beloved of Roman centurions, who first made wine there. Raspberry-rich Grenache, with herby Syrah and Carignan, Cabalié has impressive concentration. That’s due to the maturity of the vines, most well over 50 years old. The tiny berries they produce give Cabalié extraordinarily rich, ripe flavours. Smooth, velvety raspberry, blackberry, herbs and spice, all leading you to a long finish. Boasting 9 Golds in as many vintages, this much-loved red is warming solo or with hearty dishes.
Hervé Sabardeil, our winemaker with limitless talent, has been making Cabalié, the big, ripe Catalan red, for over 15 years. He added the old-vine (Vieilles Vignes) edition in 2011, originally as a one off, but it was so popular we insisted he did it again. And again! The magic to this punchy red is really in the vines. At 60 to 100-years-old, yields are minute (about half of a Grand Cru claret). As a rule of thumb, the smaller the yield, the more concentrated the fruit, the more flavoursome the wine! That’s why we call it Cabalié’s Big Brother. Still made in the same style that was beloved by the Roman centurions and now our customers too, it packs even more flavour than the original. Ideal with garlic-roasted lamb, rich stews or cheese. “Nose of black fruits with white pepper and liquorice touches. Silky, solid attack driven by stewed fruits.
