The Wine
Roche Lacour winemaker Laurent Mingaud works his magic beneath the hills of Limoux. Here, the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, centuries before Dom Pérignon!

Bottles back then were fragile and didn't travel, so the monks' success remained a secret. After perfecting his sparkling white, Laurent wanted to make a rosé, but appellation laws would not allow it. Undaunted, he petitioned the authorities and won. This pioneering pink gains its salmon hue in the same manner as the finest Champagnes, from gently pressed Pinot Noir (others merely blend red and white wine). Enjoy this delightful rosé when celebrating, or serve with grilled salmon.
