After enjoying a “distinguished career as a winemaker spanning over 20 years, working for some of Australia’s largest wineries” (Halliday), John Quarisa is making his own wines – his own way. The result? Mile upon mile of excellent wines! Fragrant cassis, ripe plum with hints of mint and subtle cedar oak aromas, followed by rich black fruit, sweet plum and fine grain tannins across the palate. A soft, generous Cabernet which pairs perfectly with duck or rabbit. This wine has the flavour, structure and balance to be enjoyed now or offers added satisfaction from further cellaring.
The term ‘Wayfaring’ means ‘to travel’, while ‘Catador’ means ‘taster’ in Spanish. This eye catching label depicts South Australia’s state flower: Sturt’s Desert Pea. South Australia is famous for its big, full-flavoured reds – this one is no exception. The Full Fifteen is a powerful customer favourite boasting plenty of reviews. Andrew McPherson, or ‘Big Mac’ to friends, launched this mighty Aussie red in 2003. It was an instant hit with customers and we really didn’t think it could get any better. Then, in 2012, Andrew appointed Jo Nash as chief winemaker and quality went up another step. Mother of four and married to another winemaker, she's a very busy lady, but fits it all in with a big smile and has many top awards to her name. She took the much-loved Full Fifteen and added yet more layers of gorgeous flavour, all with an elegant touch. Punnets of black summer berries mingle with a seductive, smoky spice. A Big Red to pair with a rib-eye steak or a hearty casserole.
The fruit utilised in this wine is from an area of Mountadam Vineyards eastern vineyard planted in 2001. The vines are planted at 450 meters above sea level. A brilliant display of blue fruits, spice and cedar characters on the nose. The palate tells much the same story, with blueberry and dense blackberry flavours and an underlying licorice root character. It's an elegant Shiraz showcasing an underlying spiciness and supple long tannins. "A beautiful expression of red fruits and pepper with the gentle support of dark chocolate oak. Bright, natural acidity and fine-grained tannins are impressively composed, balanced from the outset, yet will endure... 92pts" (Tyson Stelzer, Halliday Wine Companion).
Produced from hand-selected fruit from top McLaren Vale vineyards, The Black Pig Shiraz leaps from the glass with sumptuous, rich and ripe blackcurrant tones and vanilla snippets.
