For Rex Mundi, Hervé uses intense Shiraz and Grenache grapes grown on the craggy hillsides of the Languedoc-Roussillon. Warm sunshine and cooling Mediterranean breezes help grapes ripen to perfection, bringing great freshness and depth of flavour.
Looming over the vineyards, ancient castle ruins are perched on rocky peaks – ancient strongholds that were once home to medieval Cathars who feared the evil god Rex Mundi (‘King of the World’).
